Monday Morning Coffee: A Sizzling Start With Fajitas

That meat-scented sizzle is already on your mind, isn’t it?

While National Fajita Day may not yet be on your calendar, we hope it will be by the time you finish reading this week’s Monday Morning Coffee.

Today, August 18, is National Fajita Day, and it’s not too late to plan a fantastic celebration. Maybe you’ve got your carefully sliced cuts of beef marinating in the fridge for tonight’s Mexican feast. Or maybe you prefer to taste someone else’s idea of the perfect fajita. More on that later.

First, you should flavor your Fajita Day with a bit of history…

Did you know that National Fajita Day was dreamed up by On the Border Grill and Cantina? The first one took place in 2016.

Another fun fact: Fajitas were developed by cowboys making use of throwaway cuts of beef. They would cook the meat over an open fire and then wrap it up in tortillas. Over the years, the flavor has been enhanced at Mexican eateries with the use of mesquite wood and onions and peppers added in. Eventually, restaurants began to offer fajitas with chicken and shrimp, and even all-vegetable options.

If you’re craving a fajita but prefer to let someone else do the cooking, there are plenty of options in the area for celebrating National Fajita Day and here are just a few:

Barbosa’s: The chicken fajita wrap at Barbosa’s gives you all the flavor of a fajita in each delicious bite. Located at 4804 Frederick Avenue in St. Joseph, Barbosa’s is open from 11 a.m. to 8 p.m. on National Fajita Day!

Los Compadres: This Mexican restaurant offers all of your favorite dishes from their convenient location at 815 S. Belt Hwy in St. Joseph. You can order online or enjoy a meal at their table. Try the fajitas nachos or choose from a wide selection of fajita combinations. Los Compadres even features tastes of Hawaii and Cancun in their fajitas.

El Canelo: Celebrate National Fajita Day at El Canelo and experience new fajita flavors! The Fajitas Mazatlan is a seafood treat, while the Fajitas del Tocho Morocho includes not just chicken and steak, but French fries, bacon and jalapenos.

If you’ve always thought that August needed its own major holiday, this may be the one. Celebrate National Fajita Day with one of these great local restaurants and order a margarita to complete the fun. ¡Feliz Día Nacional de la Fajita!
